Esatto, parliamo dei <strong>bangers and bash: le famosissime salsicce con pur\u00e8 inglesi!<\/strong> Continua a leggere per scoprirne origini e ricetta.<\/p>\n\n<h2 style=\"text-align: center;\">Cosa sono i Bangers and Mash?<\/h2>\n\n<p>La storia del nome<em> bangers and mash<\/em> \u00e8 curiosa e legata proprio al periodo storico in cui si diffuse questa ricetta, quello della guerra. <strong>La carne di qualit\u00e0 scarseggiava e infatti spesso si ricorreva a dei piccoli <em>tricks<\/em> per rendere le portate pi\u00f9 attraenti<\/strong>. Ecco quindi che per far apparire pi\u00f9 pienotte le salsicce si aggiungeva dell\u2019acqua alla carne di maiale o agnello durante il confezionamento. Il problema di questa pratica? Durante la cottura spesso le salsicce esplodevano&#8230; da qui il <em>bang<\/em> di bangers!<\/p>\n<p>Oggi le salsicce non esplodono pi\u00f9, ma il nome \u00e8 rimasto per tradizione. I bangers sono considerati <em>the quintessential British breakfast sausage<\/em> e il termine ormai indica in via generale tutte le salsicce prodotte in the UK (anche se tra loro c\u2019\u00e8 una grossa variet\u00e0, basti pensare all\u2019<em>Haggis<\/em> scozzese o all\u2019<em>Oxford sausage<\/em>). Non c\u2019\u00e8 pub o famiglia che non presenti la propria versione dei bangers and mash, un <span style=\"text-decoration: underline;\">piatto povero ma molto amato nella tradizione culinaria inglese.<\/span><\/p>\n<p>Accompagnamento d\u2019elezione dei bangers and mash \u00e8 il pur\u00e8, ma attenzione a guardarlo con sufficienza! Dobbiamo infatti partire da una verit\u00e0 assoluta: <strong>gli inglesi amano il pur\u00e8, detto <em>mash<\/em>, in ogni sua forma e variante<\/strong> da circa il diciottesimo secolo. Basti pensare al numero di piatti che lo vedono protagonista, come ad esempio il classico <em>Fish &amp; Chips<\/em> tipicamente accompagnato dal pur\u00e8 di piselli e menta.<\/p>\n<p>Se la base di partenza \u00e8 sempre patata con burro o panna, il resto \u00e8 fantasia! Il termine mash origina proprio dal verbo<em> to mash<\/em>, ovvero schiacciare (tipo con lo schiacciapatate appunto!). Anche se sono infinite le varianti di questo classico contorno, ecco quelle che possono probabilmente considerarsi le pi\u00f9 apprezzate: <span style=\"text-decoration: underline;\"><em>onion and bacon<\/em> (cipolla e pancetta), <em>peas or carrots<\/em> (piselli o carote), <em>pumpkin<\/em> (zucca), <em>and so on.<\/em> Il loro sapore delicato li rende l\u2019accompagnamento ideale per i saporiti bangers!<\/span><\/p>\n<p>Non dimentichiamoci per\u00f2 di un ultimo ingrediente fondamentale: l\u2019<strong><em>onion gravy<\/em><\/strong>. Questa opulenta salsina a base di cipolla \u00e8 ci\u00f2 che davvero d\u00e0 una svolta ai bangers and mash.\u00a0Il trucco sta nel caramellare le cipolle nel grasso delle salsicce con un pochino di zucchero e di farina, sfumando con brodo o aceto balsamico, cos\u00ec da creare una salsa di carne liscia, profumatissima e delicata. <em>Yumm!<\/em><\/p>\n\n<h2 style=\"text-align: center;\">Come preparare i bangers and mash<\/h2>\n\n<p>Ecco allora la ricetta completa dei bangers and mash, secondo l&#8217;autorevole <strong><em>English Breakfast Society.<\/em><\/strong><\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li aria-level=\"1\"><em>4 Pounds Of Lean Shoulder Pork<\/em><\/li>\n<li aria-level=\"1\"><em>1 Pound Of Pork Fat<\/em><\/li>\n<li aria-level=\"1\"><em>3 Teaspoons of Salt<\/em><\/li>\n<li aria-level=\"1\"><em>2 Teaspoons Of White Pepper<\/em><\/li>\n<li aria-level=\"1\"><em>\u00bd Teaspoon Of Mace<\/em><\/li>\n<li aria-level=\"1\"><em>\u00bd Teaspoon Of Nutmeg<\/em><\/li>\n<li aria-level=\"1\"><em>1 Teaspoon Of Sage<\/em><\/li>\n<li aria-level=\"1\"><em>1 Teaspoon Of Onion Powder<\/em><\/li>\n<li aria-level=\"1\"><em>2 Teaspoons Of Thyme<\/em><\/li>\n<li aria-level=\"1\"><em>1 Teaspoons Of Ginger<\/em><\/li>\n<li aria-level=\"1\"><em>2 Cups Of Breadcrumbs<\/em><\/li>\n<li aria-level=\"1\"><em>Hog Casings<\/em><\/li>\n<\/ul>\n<p><em><strong>Instructions:<\/strong><\/em><\/p>\n<ol>\n<li aria-level=\"1\"><em>First things first, prepare your seasoning. Mix together two teaspoons of thyme, three teaspoons of salt, one teaspoon of sage, half a teaspoon of nutmeg, one teaspoon of onion powder, half a teaspoon of mace and one teaspoon of ginger, then mix in two cups of breadcrumbs.<\/em><\/li>\n<li aria-level=\"1\"><em>Now you can start grinding your meat and fat, make sure it\u2019s cold (below 30\u00b0F) and as fine as it can be.<\/em><\/li>\n<li aria-level=\"1\"><em>Properly mix in your seasoning with your hands to make sure it is thoroughly mixed in, then put it back in the freezer to cool down to below 30\u00b0F again.<\/em><\/li>\n<li aria-level=\"1\"><em>Once your mix is cold enough you can start stuffing your sausages.<\/em><\/li>\n<li aria-level=\"1\"><em>Keep doing this until you have used up all of your bangers mix.
